TIP – Chicken wings can be replaced with chicken legs or thigh cutlets.

Step 1.
Combine oil, seasoning and onion powder in a small bowl. Brush all over chicken wings. Place chicken in a single layer in a large, oiled roasting pan.
Step 2.
Arrange potatoes, carrots and onion around chicken in pan. Pour over stock.
Step 3.
Cook in a 200C preheated oven for about 1 hour, turning vegetables halfway through, until chicken is cooked through and vegetables are tender. Stir in olives and juice.
Step 4.
Garnish with chopped parsley. Serve with lemon wedges.
